A baby Dutch Baby

SCOTTSDALE, Ariz.--Ain't she sweet?

This is the $7 "junior" version of the famous Dutch Baby at the cash-only Original Pancake House just down Camelback from the ritzy Neiman Marcus, adjacent to the decidedly retro Motel 6. So many of this city's restaurants are new, overbuilt and over-decorated, that the plain vinyl of OPH is a welcome relief.

Cornichon has written about this dish more than once over the years, here for the Seattle version, and here for the original Portland version.

Les Highet and Erma Hueneke opened the first pancake house almost 60 years ago in a Portland suburb and have never looked back. Over 100 stores in the chain today, almost all franchised. It's not Mickey D's, thank goodness; in fact, the Dutch Baby is about as far from an Egg McMuffin as you can get.
